Tuna and White Bean Salad

This is a great alternative to the boring tuna salad. Its light a refreshing and can be paired with many different foods.

Serves – 4 

Prep time – 10 mins

  • 2 cans chunk light tuna in water, drained
  • 1 can white beans or chick peas, drained and rinsed
  • 1 red bell pepper, diced
  • 1/4 cup red onion, diced
  • 1 tbsp olive oil
  • juice of 1 lemon

 

Optional: Parsley, tomatoes, cucumber

  1. Mix ingredients 
  2. chill in the refrigerator.
  3. Serve on a bed of greens.
